What makes this wine so distinguishable from others in its field is how the unique minerality of the terroir shows up in the bouquet. Its acidity and its aromatic strength create the perfect environment for an intense flavor experience.
This Cuvée is made only with the best white grapes from the vineyards of the Coopérative. Every single grape is carefully chosen based on its quality and in fact only 10% of the total grapes are selected to create this unique champagne.
The balance of acidity and aromatic flavours pair extremely well with strong flavours, think aged cheese and wild game. Any food with aromatic notes create an interesting dynamic with this Cuyée - mushrooms, artichokes, onions, asparagus, sauces. It is truly sublime with truffles. Or, add complexity and interest to a lighter option such as crepes, lasagna, shellfish, or a charcuterie board.

This wine makes a perfect pairing for aperitifs, it balances with earthy notes (asparagus, artichokes, onion, mushrooms, truffles) or fish dishes, especially shellfish, and starchy dishes, such as pasta, baked goods, fried food, and desserts.

As reviewed by the Sommelier World Champion Luca Gardini: "This wine has the typical characteristics of a great rosé champagne, it leave an impression thanks to its lightness and exuberant, lingering bubbles, with an apricot flavor and a finish of seaside notes. I would combine it with red prawns marinated in campari, with parsley and celeriac."

This cuvée is the union of several vintages of Pinot Noir and Pinot Meunier (vinified in white) and Chardonnay. It gets its unmistakable pink color with the addition of 15% wine vinified in red. It is a wine that is recognized for its roundness, elegance, freshness and lingering, fine bubbles.
​
The color of this Champagne lends itself beautifully to an aperativo, or with risottos, seafood, fish, white and game meat, spicy foods, cheeses, pizza, and earthy-flavored vegetables, such as mushrooms.

For this Cuvée, black berries from the vineyards between the regions of Janvry, Getmigny and Rosnay have been selected. This terroir provides grapes (three vintages of Pinot Meunier at 85% and Pinot Noir at 15%) that are uniquely flavorsome.
The fragrance brings fresh notes of minerality, citrus fruits, unripe red fruits, white flowers, lime, bread crust and nuances of yeast. At the palate, mineral and savory notes enhance the structure with a final note of ripe fruit to round out and reveal the completeness of this unique Champagne.

This wine has been rested on the lees for three years with three months in the cellar after dégorgement to enhance the complexity of its flavor.

This Cuvée, 30&3, tells a unique story of the place it was grown and its history. 3 Kings were crowned in Reims where the grapes are grown — 30 in the Cathedral and 3 in the Church of St Remi.
The Champagne is also made up of 30% Pinot Meunier, infused with the flavour of the oak barrels it was vinified in, and 70% Chardonnay.
Classed as an Extra Brut, with a Brut Nature of 3g/l , you will find this less sweet than traditional Bruts, “…a Champagne of absolute character, in its strength we can find a freshness which brings together an aromatic yet balanced experience,” according to Jean-Christophe, Chef de Cave.

Pair this wine with luxury foods such as dark chocolate, caviar, and oysters. It also goes well with truffles, mushrooms and game meat.
